Salt & Pepper Squid


  1. 500g squid cleaned
  2. 200 grams of cornflour-seasoned with salt and pepper
  3. 3 cloves of garlic
  4. Salt
  5. Ground pepper
  6. 1 red chilli sliced(suggestion)
  7. Avocado or vegetable oil


1. To prepare the squid- remove the tentacles and run your knife along the squid pieces in a diagonal criss-cross pattern and then slice lengthways into approx. 2cm wide strips

2. Heat 8cm of oil in a deep fryer/wok to 180°C (350°F)-you can use the other end of a wooden spoon to test the heat of oil

3. Transfer the squid into a mixing bowl and add the seasoned cornflour. Make sure the squid is coated well with the flour

4. Fry the squid in batches for approx. 2 minutes, remove the squid using a slotted spoon and place onto a plate with kitchen towel to drain the excess oil

5. In a wok, heat 1 tablespoon of oil over medium heat. Add the chilli, garlic, salt and pepper and then add the squid. Toss for a couple of minutes and then transfer to a serving plate.
