Chicken Caprese
Ingredients
- 2 chicken breasts (flattened with a millet)
- 1 teaspoon Italian seasoning
- salt and pepper
- 4 slices mozzarella
- 4 thick slices of tomatoes
- Basil pesto
- 4 leaves of basil
Balsamic reduction
½ cup of balsamic vinegar
2 tablespoons of brown sugar
Method
- Preheat the oven (350 F or 220 Celsius)
- To make the balsamic reduction; in a small pot add the balsamic vinegar and sugar leave to simmer for 10 minutes, whilst this simmering we can start working on the chicken
- Season the chicken breasts with the Italian seasoning, salt and paper
- Heat a skillet/griddle pan over medium heat with oil and add the chicken breasts, cook for 3-5 minutes both sides until browned
- Top each breast with the pesto and then add the 2 slices of mozzarella and 2 slices tomato
- Remove from stove and place into the oven to allow the mozzarella to melt this will take a few minutes. Once you notice the mozzarella melting remove from the oven
- Add basil leaves on top and drizzle some of the balsamic reduction
- Enjoy!
