Chicken Caprese


  1. 2 chicken breasts (flattened with a millet)
  2. 1 teaspoon Italian seasoning
  3. salt and pepper
  4. 4 slices mozzarella
  5. 4 thick slices of tomatoes
  6. Basil pesto
  7. 4 leaves of basil

Balsamic reduction
½ cup of balsamic vinegar
2 tablespoons of brown sugar


  1. Preheat the oven (350 F or 220 Celsius)
  2. To make the balsamic reduction; in a small pot add the balsamic vinegar and sugar leave to simmer for 10 minutes, whilst this simmering we can start working on the chicken
  3. Season the chicken breasts with the Italian seasoning, salt and paper
  4. Heat a skillet/griddle pan over medium heat with oil and add the chicken breasts, cook for 3-5 minutes both sides until browned
  5. Top each breast with the pesto and then add the 2 slices of mozzarella and 2 slices tomato
  6. Remove from stove and place into the oven to allow the mozzarella to melt this will take a few minutes. Once you notice the mozzarella melting remove from the oven
  7. Add basil leaves on top and drizzle some of the balsamic reduction
  8. Enjoy!
