Loaded Chicken Taco

Ingredients

4 Chicken breasts (you can use 6-thigh fillets)
1 whole Sliced red/white onion

Chicken Marinade
2 teaspoons Paprika
1 teaspoon Chilli powder
2 ½ to 3 garlic cloves, minced
2 teaspoons Dried oregano
1 teaspoon cumin powder
1 teaspoon Onion salt/powder
2 tablespoons Lime juice

For Taco filling
Sour Cream
Romaine lettuce chopped
Diced fresh tomatoes
Grated cheddar cheese
Coriander/Parsley
2 mashed avocados
½ cup red onion
1 fresh tomato diced
Fresh chopped red chillies (optional)

Method

  1. Combine all the chicken marinade ingredients into a medium sized bowl and then add the chicken. Leave to marinade in the refrigerator for 30mins to 1 hour (depending on the time you have)
  2.  Heat a skillet/griddle pan over medium heat with oil and add the chicken and onions, cook for 3-5 minutes both sides until browned
  3. Remove from heat and place onto a plate, leave to stand for 2-3 minutes before chopping into small pieces
  4. Warm the tortillas and serve by adding the avocado, topping with chicken and then any of the other toppings you fancy!
  5. Enjoy
