Spaghetti Carbonara


  1. 1 pound spaghetti
  2. 6 ounces pancetta or bacon, diced
  3. 4 cloves garlic, minced
  4. 2 large eggs
  5. 1 cup grated Parmesan cheese
  6. Salt and freshly ground black pepper
  7. 1/4 cup chopped fresh parsley (optional)



  1. Cook spaghetti according to package directions in a large pot of salted boiling water.


  1. While spaghetti cooks, heat a large skillet over medium heat.


  1. Add diced pancetta/bacon and cook for 5-6 minutes, stirring occasionally, until browned and crispy.


  1. Add minced garlic to the skillet and cook for 1-2 minutes, until fragrant.


  1. In a mixing bowl, whisk together eggs and Parmesan cheese until well combined.


  1. Drain the spaghetti, reserving about 1/2 cup of the cooking water.


  1. Add spaghetti to the skillet with pancetta and garlic, and toss well to coat the pasta.


  1. Remove the skillet from heat and pour in the egg mixture, stirring quickly and continuously until the eggs are cooked and the sauce is creamy.


  1. If the sauce is too thick, add a little of the reserved pasta water to thin it out.


  1. Season with salt and black pepper to taste, and sprinkle with chopped parsley, if desired. Serve immediately.
