Vegan Chickpea Curry
Ingredients:
- 1 can of chickpeas (rinsed and drained)
- 1 onion (chopped)
- 2 cloves of garlic (minced)
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of turmeric powder
- 1 can of diced tomatoes
- 1 cup of vegetable broth
- 1 cup of frozen peas
- Salt and pepper to taste
- Fresh cilantro for garnish
Method:

In a large skillet, heat a tablespoon of oil over medium heat. Add the onion and sauté until softened, about 5 minutes.

Add the garlic, cumin, coriander, and turmeric and stir to combine.

Add the chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 10-15 minutes until the sauce has thickened.

Add the frozen peas and let them cook for another 5 minutes, until they are tender.

Season with salt and pepper to taste.

Serve hot, garnished with fresh cilantro.
