Vegan Chickpea Curry


  • 1 can of chickpeas (rinsed and drained)
  • 1 onion (chopped)
  • 2 cloves of garlic (minced)
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of turmeric powder
  • 1 can of diced tomatoes
  • 1 cup of vegetable broth
  • 1 cup of frozen peas
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. In a large skillet, heat a tablespoon of oil over medium heat. Add the onion and sauté until softened, about 5 minutes.

  2. Add the garlic, cumin, coriander, and turmeric and stir to combine.

  3. Add the chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 10-15 minutes until the sauce has thickened.

  4. Add the frozen peas and let them cook for another 5 minutes, until they are tender.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with fresh cilantro.
