Pakchoy & Egg Chapati Roll


  1. 2 eggs
  2. 2 Pakchoy leaves
  3. 1 cooked Chapati
  4. 1/2 avocado
  5. Salt and pepper to taste
  6. 1 tsp peanut butter
  7. 1 tsp chopped parsley




  1. Wash the Pakchoy leaves and chop them finely.
  2. In a bowl, beat the eggs and add the chopped Pakchoy, salt, and pepper. Mix well.
  3. Heat a non-stick pan and add the egg mixture. Cook until the eggs are set.
  4. Meanwhile, spread the peanut butter on the Chapati.
  5. Cut the avocado into slices and place them on the Chapati.
  6. Add the cooked egg and Pakchoy mixture on top of the avocado.
  7. Roll the Chapati tightly, and cut into halves.
  8. Garnish with chopped parsley.


  • Serve with a glass of mixed fruit juice.
